3 tsp grated lime zest
3 Tbsp. fresh lime juice
4 Tbsp.olive oil
1 tsp. sugar or equivalent sweetener
1/2 tsp. black pepper
1 c. quinoa uncooked and rinsed
1-15 oz. can black beans, rinsed and drained
2 medium tomatoes, diced
2 scallions, chopped
1/4 c. chopped fresh cilantro
1-2 c. kale leaves - or - spinach leaves torn into small pieces
1/4 c. crumbled feta cheese

Directions:
Directions:
Whisk together lime zest and juice, oil, sugar, and pepper in a large bowl.
Cook quinoa according to package directions. Cool to room temperature.
Mix the cooked quinoa, dressing, and remaining ingredients. Toss to coat. Serve chilled.
