Chicken pieces
Valencia rice (a short grain rice)
1 large green pepper, chopped
1 large onion, chopped
1 small jar of green olives, chopped
5 garlic cloves, minced
Chicken broth
1 can beer
Splash of white wine
8 oz tomato sauce
Yellow seasoning like paprika and tumeric

Directions:
Directions:
Season chicken with salt and pepper, garlic powder, etc. Cook chicken in oil for a couple of minutes. Then add chopped veggies (onion, green pepper, green olives, and garlic) and cook until all is tender. Add tomato sauce (I use jar pasta sauce that I have in the frig). Cook about a minute or two. Add beer and splash of wine and boil a few minutes. Add rice and chicken broth. Sprinkle paprika and tumeric (about 1/4 tsp each). This will make it yellow. Add about 2 tsp salt. Cover and cook 20 minutes. Stir well and let sit to absorb liquid.

(For every cup of rice - 2 cups of chicken broth.)
