9 cups peeled, sliced apples
1 1/2 Tablespoon lemon juice
3 cups water (more or less)
2 cups sugar, or to taste
1/2 cup cornstarch
1 teaspoon cinnamon
1/2 teaspoon salt
1/8 teaspoon nutmeg

Directions:
Directions:
1. Peel apples. Cut in same size, approximately 1/4 inch thick. In large bowl, toss apples with lemon juice. Set aside. Put water into pan over medium heat. Combine sugar, cornstarch, cinnamon, salt and nutmeg in a bowl. Add to water and stir well, bring to a boil. Boil for 2 minutes, stirring constantly.

2. Add apples and return to boil. Reduce heat, cover and simmer until apples are tender, about 8-10 minutes. Cool for 30 minutes.

3. Ladle into frozen containers, leaving 1/2 inch head space. Cool at room temperature no longer than 1 1/2 hours. Seal and freeze. Can be stored for 12 months.

4. If not freezing, this may be used for pies or toppings.
