1 bag frozen broccoli
1 onion, diced
3 cups of rice (cooked)
1 log of Velvetta cheese
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup of milk
salt and pepper

Add chicken if you want to make it a meal.

Directions:
Directions:
Saute diced onion until lightly browned.
Cook rice
In a 9x12 pan mix rice, broccoli, onions, milk, cream of mushroom, cream of chicken and salt and pepper to taste.
Cube the log of Velveeta and mix into casserole (half log).
Bake at 350 for 15-20 minutes.
Place handful of Velveeta cubes on top for the casserole and place back into the oven until the cheese is melted.

Cassie grew up eating this dish, often served with the chicken. She remembers her Grandmother making it and now makes it herself as a welcome addition to the Giardina holidays.
