Two Salmon Fillets (with or without scales)
4-6 strips Bacon
1 Slice Old Cheddar Cheese
1 Tbs Romano Cheese
1 tsp. Rosemary
1 tsp. Olive oil
½ tsp. Salt
1 tsp. each Pepper, Garlic, Oregano, Thyme
1 Tbs Honey
Lemon wedge
Celery Stalk

Makes two servings.
Prep time 30~45 mins.

Preheat oven to 350ºF

Line a cookie sheet with parchment and lay down strips of bacon and sprinkle with pepper. Place bacon in the oven. Cook until chewy but not quite crispy (Around 10 mins). Meanwhile, butterfly salmon fillets and insert a thin slice of old cheddar. Lightly sprinkle Romano on top of the cheddar.

Remove bacon from the oven and place a few strips on top of the cheese. Fold over butterflied salmon and tie with a string. (Alternatively you can use a BBQ fish grate)

Preheat oven to 400ºF. (Or fire up The BBQ)

Combine garlic, rosemary, salt, thyme and oregano and grind in a mortar and pestle. Brush fish with olive oil and rub dry spice mixture onto salmon. Cook fish for ten minutes and during final stages of cooking brush lightly with honey to retain moisture. Cooking time will be reduced on the BBQ. Serve with lemon wedge, red wine, and celery sticks.
