1 tsp. baking soda
½ tsp. cornstarch (optional, to prevent clumping if storing it)

If you can find monocalcium phosphate in a health supplement store, this is an excellent addition to your baking powder. [This is the active acid ingredient in the popular brand Magic Baking Powder by Kraft] Simply replace one tsp. of the cream of tartar with monocalcium phosphate powder.

Mix and use immediately or store in an airtight container. Baking powder is simply baking soda with an acid ingredient mixed in. Once liquid is added, the acid and alkaline ingredients combine, produce CO2, and you have your leavening agent.

Store bought baking powders are "dual acting", they contain fast acting acid for when it is first mixed, then the slow acting acid for when heated in the oven. Homemade baking powder is "single acting", just when they are first mixed, so it is best to mix and use right away. No letting the batter sit for a few while you check out your Instagram.
