12-14 Yukon Gold potatoes, prewashed
1 lrg. onion, chopped
1-2 carrots, sliced
1 pkg. cream cheese, softened
⅓ C butter
1¼ C 18% cream
4 green onions or chives
salt and pepper to taste
shredded cheese to taste

Directions:
Directions:
Cook potatoes, carrots, and onions until tender, about 20 mins. Drain and mash until smooth; mix in butter and cream cheese until melted. Stir in cream and green onions or chives, salt and pepper.

Preheat oven to 400ºF. Transfer potato mixture to 9x13 in. baking dish. Top with shredded cheese of your choice. Bake until cheese is bubbling and potatoes are heated through, about 25 mins. Depending on the cheese, you may also bake for the first 15 mins., remove from oven, top with cheese, then return to oven for another 10-15 mins. Let stand 10 mins. before serving.
