4 Potatoes, thinly sliced into medalions
1 Onion; chopped
1 ­½ lbs. Hamburger
½ C. Rice; uncooked
1 Can Tomato Soup
1 Can Tomatoes
1 C. Boiling Water
Preferred Spices/Seasonings

Directions:
Directions:
Preheat oven to 350ºF. Butter a baking dish, add potatoes and onion. Add a layer of hamburger, followed by remaining ingredients. Season with preferred spices such as salt, pepper, garlic powder etc. Cover and bake about 2 hours, checking 1-2 times to ensure hamburger is fully cooked.

Great for times when you need to quickly throw something in the oven and get back to other chores before family comes home.

Note: if more potatoes or rice are used, more liquid will be needed. If using more hamburger you may need to increase the cooking time accordingly.
