150 mls un sweetened coconut milk
2 tbsp flaxseed
2 tbsp gound almonds
3 tbsp coconut flour
200g gluten free flour
2 tbsp cocoa powder
1 tsp bicarbonate of soda
4 tbsp chocolate flavoured whey protein
6 pitted dates
45g dark chocolate
3 tbsp coconut oil
50 mls olive oil
3 tbsp stevia
2 tsp vanilla extract

( Makes 12 cookies)

Per Serving- 238 calories, 17g carbs, 10g protein & 14 fat

Pre heat oven to 180c. In a small bowl mix together the coconut milk, flaxseed and almonds. Leave to stand for 5 minutes. In a large bowl mix the flours , cocoa powder, bicarbonate of soda , whey protein , dates and chocolate. Add the oils , stevia and vanilla extract to the coconut milk mixture. Stir well. Leave to stand for 10 minutes. Pour the wet mixture into the dry mixture and stir well. Add a drop of water if needed. The consistency should be a thick paste. Line several trays with baking paper. Roll small amounts of the mixture into balls. Press gently into disc shapes onto the baking paper. Allow the same space between ach cookie as they will spread once cooked. Sprinkle a little extra stevia on top of each cookie. Bake fro 10 minutes and then transfer over to a wire rack to cool. Store In an air tight container for up to 4 days.
