20g Flaxseed
150g Bramley apples
150g Coconut flour
half tsp xanthum gum
2 tsp baking powder
50g Chocolate flavour whey
pinch of sea salt
2 tsps cinnamon
3 tsp stevia
50g coconut palm sugar
100mls light coconut milk & 100mls extra virgin olive oil
1 egg + 1 egg white
200g carrots
80g raisins & 20g nuts

(Makes 14 slices)
Per Serving- 190 Calories, 15g Carbs, 10g Protein & 12g Fat

Pre heat oven to 180c .Line a base of 2 medium loaf tins with baking paper. Mix the flax seed with a little water until the consistency thickens and leave to stand. Bring a small sauce pan to the boil and add apple and simmer gently for around 5 minutes or until soft. Remove from the heat and drain through a fine sieve. Transfer the apple to a bowl to cool .In a large bowl mi the flour ,xanthum gum , baking powder , whey protein, salt, cinnamon, ginger, stevia and coconut sugar . In a separate bowl mix the coconut milk, olive oil, egg, egg white, apple sauce until smooth. Gently stir the carrots and raisins and mix. Divide the mixture between the 2 tin loafs and sprinkle the nuts over the top. Bake for 30 minutes and remove from oven and leave to cool for 5 minutes on a wire rack. Remove from the tins and allow to cool further. Store in an air tight container for up to 3 days .
