2 sticks margarine
2⅔ cups sugar
5 eggs
3 cups flour
1¼ tsp baking powder
½ tsp salt
1 cup milk
2 tsp vanilla
1 cup flaked coconut

Directions:
Bring all ingredients to room temperature. DO NOT PREHEAT OVEN!

Cream margarine for 2 minutes at speed 1.

Add sugar and cream 3 minutes at speed 6.

Add eggs, one at a time and after each cream 2 minutes at speed 4.

Sift together flour, baking powder and salt. Add ½ dry ingredients and mix 1 minute at speed 1.

Add milk and vanilla and mix 30 seconds at speed 1.

Add remaining dry ingredients and mix 90 seconds at speed 1.

Add coconut and mix at speed 1 until mixed through.

Pour into greased and floured angel food cake pan. Place in cold oven. Bake at 325º-350º for 1 to 1¼ hours, or until toothpick inserted in middle comes out clean. Do not over bake.
