8 to 10 chicken drum sticks
salt and pepper
chilli flakes
2 tblspn olive oil
1 large onions
1 large red capsicum
Large handful of small whole shallots, or Pearl onions
100 grams of sun dried tomato
Italian sausage about 6 inches, quartered and sliced about 4mm thick
Good pinch of saffron
Paprika
About 10 cloves garlic
1 mild chilli (adjust to taste)
1 bunch of spring onion
1 can of butter beans
2 cups arborio rice
2lt chicken stock

Directions:
Directions:
Coat drumsticks with salt, pepper and chilli flakes and cook until nicely golden brown.
Set aside
Add to baking dish the olive oil, chopped onion, capsicum, shallots or pearl onion, sun dried tomato and Italian sausage. Sprinkle with a good pinch of saffron and dusting of paprika. Place in BBQ to start cooking.
After 15-20 minutes, when the sausage is looking cooked, add garlic, chilli and spring onion, cook for 10 minutes
Add 1 can of butter beans, cook for 3 minutes
Add 2 cups arborio rice and stir to coat rice with oils, push in drum sticks and cook 3 minutes
Pour in chicken stock to cover.
Keep topping up with 1 lt of stock and turn dish 2 or 3 times until rice is cooked
Should take about 45 minutes after first adding stock .
When stock is all soaked up and rice is cooked turn BBQ off and let sit for 10 minutes
