Dressing

½ Cup mayonnaise
2 Tablespoons (after you stir dressing taste on finger it needs to be a little sweet and gritty. The sugar will dissolve when it sits for a few minutes) If you like sweeter add couple teaspoons sugar.
2 Tablespoons Apple Cider Vinegar (there again it you like more tart add a little more vinegar)
¼ teaspoon salt
¼ teaspoon of pepper

Mix in small bowl

Add to large head of shredded cabbage
1 green pepper - diced
1 red pepper- diced
Bunch of green onions finely chopped (more if you like)

If these directions seem vague that’s because they are. I never measured just made. So do it your way, but the crunchy green/red peppers and green onions make the slaw!

Deva Hampton (Grandpa Wayne Hampton’s mother) made this cole slaw for years. She didn’t measure anything, but always got it right. She would go by taste and texture of the dressing. After grandpa and I were married I began making it as well and it was always a hit with my father, Ray Harris. I would make it the same way she showed me how, but as my children grew their taste buds differed and I would adapt to their tastes and sometimes the seasons of the year. (Deva made it only with green bell peppers, but I changed to red and green at Christmas time, yellow, orange and red at Thanksgiving. But my favorite is still the green and red peppers)
