2 stalks diced celery
6 carrots - sliced thin
6 green onions sliced
1 medium white onion, chopped
1 15.5 or 16 oz can crushed or diced tomatoes
1 large head of cabbage - cut into small pieces or shredded
1 8 oz can green beans
2 green peppers (or one red 1 green)
3 Cups water
2 chicken or beef bouillon cubes (or mom sometimes used Lipton Onion Soup Mix using ˝ cup less water than directions say, as vegetables contain water. )

Salt, pepper, parsley, Cilantro, Salsa, Tabasco all can be added to individual bowls according to your taste.

In the early 1960’s as throughout most generations there is always a “Diet Fad” the Cabbage Soup was my generation’s and my mom made several versions both were very filling, easy and worked for a short time. 3 times a day it is boring, but Mom/Grandma made it tasty, by adding, her Guadalupe salsa. Sometimes omitting certain vegetables an adding others. The refrigerator was full of jars and bowls of this soup. I am sure Lauren and Susan remember it as it always seemed to surface at least once a year at grandma's.
