"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

1 large can crushed pineapple (drained completely! Press the juices out before adding to recipe)

Directions:

WHIP WITH MIXER (be sure beaters and bowl are clean & dry) gradually add sugar as mixing to stiff peaks.
Stir in crushed pineapple and pecans! Serve and enjoy. Grandma Deva always served as a side salad, but it makes a great simple dessert. Actually not very sweet or expensive for a beautiful dish.

Personal Notes:
I never did know how to spell the name of this salad, Grandma Deva called it White Moose, Grandpa Emmette called it Moekas. From the first Thanksgiving I shared with them, this dish was on the table. It was reserved for Holiday Dinners. I don’t remember it any other time of the year. Grandma Deva was a simple cook. Very good, plain, but comforting. This was a fancy dish for her. She really didn’t have a written recipe and I don’t make it often. It was always her dish.
