Often when we were children, mom would make homemade macaroni and cheese for dinner. She always made two pans (using bread pans). She would make the recipe, and I don’t have the actual recipe from her she just made a white sauce, added graded yellow or white cheeses, stirred in cooked elbow macaroni with lots of salt and pepper. She would fill the two pans, using her hands would smash the mac down and top with crushed saltine crackers. After they were baked in the oven, one would be served for dinner. She spooned the mac & cheese onto our plates. The other pan was covered with waxed paper and refrigerated until the next day. Mom would slide a knife around the edges of the bread pan and shake out the cold mac & cheese. She would slice it and make sandwiches with mustard and bread for our school lunches. Sounds weird and starchy, but I was a kid. They were great. And I didn’t trade them at lunchtime.
