INGREDIENTS
½ Cup chopped onions
2 Tablespoons butter
2 Tablespoons flour
2 cans(14 ½ oz each) diced undrained tomatoes
2 Tablespoons sugar
¼ Cup vegetable oil
½ teaspoon salt ¼ teaspoon pepper
3 slices toasted or dried bread cut into ¼ inch cubes

Directions:
Directions:
In large saucepan, saute onions in butter until tender; stir in flour until blended; add tomatoes, including juice, sugar, oil, salt and pepper. Bring to a boil; cook & stir for 2 minutes or until slightly thickened. Stir in toast cubes. Serve hot or cool and refrigerate leftovers

I love each of these recipes My mom fixed these regularly when I was a child. We ate as a side dish with dinner or cold out of fridge as a snack. Kinda like I do salsa today. Tomatoes are probably my favorite vegetable (fruit?)
