1 lb. beef round tips, 1/8 to 1/4 inch thick
1 jalapeņo pepper, seeded and finely chopped
1 tbsp. vegetable oil
1 pkg. beef flavored instant Ramen Noodles
1/4 c. steak sauce
1 med. carrot, shredded
2 tbsp. chopped fresh cilantro
1/4 c. chopped peanuts

Cut beef steaks into 1 by 3 inch strips. In medium bowl, combine beef, pepper, and oil. Toss to coat. Break noodles into 4 pieces; reserve seasoning packet. Cook noodles as package directs; drain. Heat large non-stick skillet over medium-high heat until hot. Stir-fry beef (1/2 at a time) 1 minute or until no longer pink (do not overcook).

Remove beef; keep warm. In same skillet, combine noodles, steak sauce, carrot (I use two carrots cut julienne style), cilantro (could use green onion instead), and reserved seasoning packet. Cook over medium heat until hot, stirring occasionally. Return beef to skillet; mix lightly. Sprinkle with peanuts (could use peanut halves).
