This recipe for Apple Butter, by Lyle DeJong, is from Brumbaugh Family Cookbook ,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
4 qt. sliced apples 1 qt. water 2 lb. brown sugar 1 qt. sweet cider 1 tsp. cinnamon 1 tsp. allspice 1 tsp. cloves
Boil apples in water until soft. Press through food mill to remove skins and cores. Continue to boil, stirring constantly in figure 8 to prevent burning. When thick, add spices and cook until thick enough to spread. Seal in sterilized jars.
