Banana Cream Pie Recipe

⅔ cup cornstarch
2 TB flour (heaping a little)
1 ⅓ cups sugar
½ tsp. salt
4 cups milk, scalded (I just heat the milk in the microwave until hot to the touch)
5 whole eggs, slightly beaten
4 TB butter
1 tsp. vanilla
4-6 bananas (depending on how many you like)

Mix cornstarch, sugar, salt, and flour in a heavy pan. Gradually add milk, stirring with a whisk all the time. Cook on medium or just above medium until very thick and begins to bubble. (Don't stop stirring or it will burn. This takes about 10-15 minutes and your arm gets tired.

Cook 1-2 minutes more.

Take off stove Put a big spoonful of the hot mixture into the bowl with the beaten eggs and quickly whisk to temper the eggs. Then slowly add the egg mixture to the hot mixture in the pan.

Return to stove on medium heat and return to a boil, stirring all the time and cook 1-2 minutes more.

Put pan in sink that you have prepared with about 2 inches of ice water. Be careful not to get water in pan. Add butter and vanilla and stir until melted. Cut bananas into chunks and add, just folding in. Mixture should be very thick. Pour into prepared pie shells and cover with wax paper, pressing down lightly to cover. (This helps prevent browning of bananas.

Keep refrigerated. Top with whipped cream before cutting and serving.

1 to 3 TB sugar to taste
