Chocolate Cake |

Ingredients: 2 cups flour 2 cups sugar ¾ cup dark cocoa powder 2 tsp. baking soda 1 tsp. salt 2 large eggs 1 cup buttermilk 1 cup vegetable oil 1 ½ tsp. vanilla 1 cup boiling water

Directions: |
Directions:Prepare 2 9-inch cake pans with parchment paper circles in the bottom and grease the sides.
Add all dry ingredients to a large bowl and whisk together.
Add eggs, buttermilk, and vegetable oil. Mix well.
Add vanilla to boiling water and add to mixture. Mix well.
Pour into cake pans and bake at 300 degrees for about 40 minutes, or until a toothpick comes out clean.
Remove cakes from oven and allow to cool. |

Pumpkin Cheesecake |

Ingredients: 3 (8-oz) packages cream cheese, softened 1 cup sugar 3 TB flour 1 tsp. pumpkin pie spice 1 cup canned pumpkin 4 eggs ½ tsp. vanilla extract

Directions: |
Directions:Preheat oven to 300 degrees. Prepare a 9-inch spring form pan by greasing the sides and bottom.
In a large bowl, blend cream cheese, sugar, flour, and pumpkin pie spice on low.
Add pumpkin, eggs, and vanilla extract. Beat until well combined.
Pour the filling into the pan. Drop onto the counter a few times to release air bubbles.
Bake for 1 hour and 15 minutes. Turn off heat and leave in the oven with the door closed for 15 minutes. Crack the door and allow to cool for 15 minutes.
Remove from oven and chill until completely cool.

Pumpkin Whipped Cream |

Ingredients: 1 cup heavy cream 1 TB powdered sugar ⅓ cup pumpkin puree 1 tsp. vanilla extract ½ tsp. cinnamon

Directions: |
Directions:Add heavy cream and sugar to a cold metal bowl whisk until soft peaks form.
Stir in vanilla and cinnamon. Whisk until stiff peaks form.
Gently fold in pumpkin puree.
Assembly: Layer chocolate cake, pumpkin whipped cream, pumpkin cheese cake, pumpkin whipped cream, chocolate cake, and pumpkin whipped cream on the top and sides.
