5# Pork Roast

Montreal Steak Seasoning 1/4 c olive oil
1 stick butter 1 heaping Tbl tomato paste
1 can chicken broth 1/2 c red wine [I use Merlot]

1 lg onion chopped full head of garlic minced-fresh
fresh parsley, chopped [about 4 Tbl] fresh sage

Directions:

Rinse pork & put lots of steak seasoning on meat

Start roaster @ 400º or crock pot on high

Put 1st 5 ingredients into roaster.
Let butter melt, if you need to do this quicker, melt butter 1st and then put in pot. Stir together

Put next 3 ingredients in. Stir. Put roast in - fat side up
Put sage leaves on roast, keeping them whole [about 6]
Chop some more and put in juice in pot
Put lid on, turn roaster 10 300º for 4 hours
Pull roast out, slice into good chops and pull off fat.
Put slices back into the juice and reduce to 200º with lid on till tender. I let mine cook all day
