• Non-stick cooking spray
• 2 sticks of butter
• 1 cup granulated sugar
• 2 egg yolks
• 1 teaspoon vanilla
• 2 ¼ cups flour
• 1 tablespoon lemon zest
• ¼ additional cup granulated sugar

1. HEAT oven to 325 degrees.
2. COAT baking sheets with no-stick cooking spray.
3. BEAT butter and 1 cup granulated sugar until fluffy.
4. BEAT in egg yolks and vanilla.
5. WHISK flour and salt; stir into the butter mixture
6. CHILL 30 minutes.
7. Pulse 1/4 cup granulated sugar and 1 tablespoon lemon zest in a food processor.
8. Roll dough into two 1-inch-thick logs and roll in the lemon sugar.
9. Freeze logs 20 minutes, then slice 1 inch thick.
13. BAKE 20 to 25 minutes or until light brown.
14. COOL on baking sheets 2 minutes. Place on cooling rack to cool completely.
