2 T. butter
1/2 c. carrots, chopped
1/2 c. celery, chopped
1/2 c. onion, chopped
1 can (10 oz.) tomatoes and green chilies
1/4 c. dry sherry
3 cans (15 oz.) black beans, undrained
1/4 c. cilantro, minced

Directions:
Directions:
In a large pot, melt butter. Add carrots, celery and onions; cook until tender; about 15 minutes. Add remaining ingredients; heat to a boil. Reduce heat and simmer for 20 minutes, stirring occasionally to break up tomatoes.
