½ cup unsalted butter, softened
1 ½ cups white sugar
1 cup pumpkin
1 large egg
½ TB vanilla
2 ½ cups flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. pumpkin pie spice
½ tsp. salt

Directions:

Preheat oven to 350º F.

In a large bowl, beat the butter and sugar together until creamy.

Beat in the pumpkin, egg, and vanilla.

Add in the flour, baking powder, baking soda, spices, and salt. Mix until well combined.

Place on a parchment lined baking sheet and bake for 10-12 minutes. Remove and allow to completely cool.
 

Frosting

¼ cup butter (room temperature)
1 (8 oz) pkg. cream cheese (room temperature)
1-2 cups powdered sugar
½ TB vanilla

Directions:
Directions:
Beat the butter and cream cheese with the powdered sugar and vanilla. Add the powdered sugar to desired consistency, but note that the frosting is supposed to be like a non-baked cheesecake layer--very thick and cheesecake-like.

Frost cookies and enjoy!
