1 c butter
1 c brown sugar
1 c white sugar
1 c flour
2 1/4 cup rolled oats
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
3/4 cup coconut

or

Crispier Cookie
1/2 c Butter
1 tsp vanilla extract
1 tsp almond extract
1/2 c shortening
1/2 c brown sugar
1/2 c white sugar
1 tsp cream of tartar
1 egg

Aunt Jenny's Cookies Original:

Cream butter, add sugars, beat in egg. Add (sifted) dry ingredients. Add vanilla, coconut, rolled oats and mix.
Form into small balls, place 2 " apart on a greased cookie, press-down cookie with a fork dipped in milk.
Bake at 350 degree oven for 10 to 12 minutes

Aunt Jenny's Crispy Cookies
Blend butter and shortening until creamy. Add brown and white sugar. Add egg and flavourings.
Lastly add in dry ingredients.
Form into small balls, place 2 " apart on a greased cookie, press-down cookie with a fork dipped in milk.
Bake at 350 degree oven for 10 to 12 minutes

Sharon, Sherri and Debby used to hang our down at Elsie McNeney's house after school, on weekends (including church on Sundays) and through the summer, helping Elsie around the house, doing crafts, but mostly eating cookies (Aunt Jenny's were a favourite), or stoned wheat thins with marble cheese and of course tea (which was more t-ilk - tea with lots of 1/2 and 1/2 cream). Elsie was an amazing woman that always seem to have time for us... PS. Aunt Jenny was Mrs. McNeney's great aunt, we never knew her as she was long gone before we were eating her cookies
