Large Sea Bass Tenderloins, thicker the better. (Perfect pieces are rounder so they may be rolled around on the grill)
1 stick butter
1 tbsp olive oil
Chopped Garlic
Basil, Rosemary, and Tarragon

Directions:
Directions:
Saute all ingredients except fish. Pour into a bowl and put in Fridge for 1-2 hour so butter may coagulate.

Fire up the grill or start charcoal. When the fire is ready, start cooking the fish. Over first few minutes your goal is to sear bass on all sides. Take butter mixture and scoop off chunks to place on fish. Be careful as mixture will flame up as it reaches the fire. Continue to rotate fish on grill and adding basting chunks until fish is fully cooked.

This technique gives a great seared flavor and if you use any type of flavored smoking box on the grill it just adds to the experience. Goes great with angel hair pasta. Enjoy!
