1 Chuck roast, 3-6 pounds
1 onion, coarsely chopped
8 carrots, peeled and cut into 3" slices
8 Yukon Gold potatoes
6 whole cloves garlic
3 tbsp. butter
2 tbsp. olive oil
1 can beef broth
2 cups red wine
1 tbsp. tomato paste
salt, pepper
2 tsp. each thyme and marjoram (Herbs de province also work well in this recipe)

Directions:
Directions:
Heat oven to 350 degrees.
Saute chopped onion in butter and oil until soft. Remove from pan with slotted spoon and place roast in hot pan. Salt the roast and brown it on both sides. Add onion, garlic cloves, beef broth, wine, tomato paste, salt and pepper to taste, and thyme to the pan juices. Cover and place in heated oven for 2 1/2 hours, adding more liquid if needed. Remove pan from oven and add potatoes. Cook for 1/2 hour. Remove from oven and add carrots. Cook for 1/2 or until potatoes and carrots are tender. Let rest for at least 20 minutes before serving.

When I cook a stew, I use basically the same ingredients, but I flour the stew meat before browning it.
