½ tsp. Sesame Oil
1 Medium Onion
1½ lbs. Chicken, cooked and cubed
2 Tbs. Soy Sauce

2 lrg. Carrots, diced
2 stalks Celery, chopped
1 lrg. Red Bell Pepper, diced
¾ C. Fresh Pea Pods, halved
½ lrg. Green Bell Pepper, diced
6 C. Cooked Rice

2 Eggs, scrambled
⅓ C. Soy Sauce

Directions:
Directions:
Heat sesame oil in large skillet over medium heat. Add onion and saute until soft, then add chicken and chicken and 2 Tbs. soy sauce. Stir-fry for 5-6 mins. Stir in carrots, celery, red pepper, pea pods and green pepper then stir-fry another 5 mins. Next add rice and stir thoroughly. Finally, stir in scrambled eggs and ⅓ C soy sauce, heat through and serve hot. For added flavour you an also add 8-10 bacon slices cut in small pieces.
