3 chicken breast halves, boneless and skinless
2 TB butter
2 TB olive oil
1 cup white onion, chopped
1 cup celery, chopped
3 TB flour
6 cups chicken broth
3-4 medium potatoes, cubed
2 cups frozen corn
1 can creamed corn
½ cup shredded carrots, bag type
salt and pepper to taste
½ cup half and half
2 TB cornstarch
¼ cup parsley, chopped

Directions:
Directions:
Dice chicken and sauté in butter and olive oil with onion and celery. Cook until chicken has browned.

Sprinkle flour over chicken and vegetables. Slowly add broth while whisking to thicken juices.

Add potatoes, corn, creamed corn, and carrots. Add salt and pepper to taste. Simmer mixture for 20 minutes.

Mix cornstarch and half and half together. Add to soup and heat up until thickened, about 10 to 15 minutes. Add parsley and serve.
