1/4 cup olive oil
large onion, chopped
2 garlic cloves, minced
1cup letItils, rinsed
1(8-oz.) can tomato sauce
4 cups Chicken Broth, page 36, or water ·

2 cups cooked elbow or tube macaroni
2 cups cooked long-grain rice
Salt and freshly ground pepper to taste
1 tablespoon chopped fresh parsley
Lemon wedges for garnish

Directions:
Heat olive oil in a large .saucepan. Add onion and garlic'. Saute until onion is tender. Add lentils. Saute 1 minute. Stir in tomato sauce. Cook 1 minute to blend flavors. Add broth or water. Bring to a boil. Reduce heat . and cover. Cook over medium-low heat 40 minutes or until lentils are tender. Fold in cooked macaroni, rice, salt and pepper heat through, stirring frequently. Garnish with parsley and lemon wedges. Makes 6 to 8 servings.

Variation
Baked Lentil, Pasta & Rice Casserole: In a small skillet. saute onion and garlic in olive oil. Add lentils. Saute 1minute. Add tomato sauce. Place lentil mixture in a large baking pan. Add 4 cups broth or water. Cover. Bake at 350F (175C) until lentils are tender, about 1 hour. Add cooked macaroni, rice, salt and pepper. Cover and bake 15 minutes longer or until heated through. Gar­nish as desired.
