1 lb sausage
1 medium onion, chopped
6 cups hashbrowns
2 cups cheddar cheese
9 eggs
1 1/2 cups milk
1/4 tsp pepper

Directions:
Directions:
In a large skillet, cook sausage and onion, breaking up sausage with a spatula. when sausage is cooked through, drain off excess fat.

In a 9x13 baking dish, layer the hashbrown potatoes, half of the cheese, browned sausage and onion mixture, and remaining cheese.

In a bowl, combine eggs, mil, and pepper: pour egg mixture over cheese.

Bake, covered, in a 350 degrees oven for 52 minutes or until a knife inserted near center comes out clean. Transfer casserole to a wire rack and let stand for 10 to 15 min.

serving size is 8 . I make early and leave in refrigerater overnight, just take out of refrig 15 minutes before baking.
