1 (10oz) package of frozen spinach, thawed completely and squeezed dry
8 oz shredded motz cheese
15 oz ricotta cheese
4 oz cream cheese
1/2 cup shredded Romano or Parmesan cheese
2 large eggs
1/2 tsp salt
1/2 tsp ground pepper
1 box (12-14 shells) manicotti shells
3-4 cups marinara sauce (1 jar + little more)
1/2 cup shredded Romano or Parmesan cheese for topping

Preheat oven to 350 degrees

In a large bowl mix spinach, cheeses, eggs, salt and pepper. Stir together until well blended.

Place about 1 1/2 cups marinara sauce in a 9x13 pan. Spread it around to cover the bottom.

Place the mixed filling into a zip lock plastic bag. Cut the corner of the bag so you can squeeze out mixture into uncooked shells.

Let it overflow out both sides of shell. Fill all shells. Place in 9x13 pan

Cover the pasta with marinara sauce using about 2 1/2 cups of sauce. Sprinkle 1/2 cup of the Ramona/Parmesan cheese on top. Cover with foil and refrigerate until you're ready to bake. Or you can bake right away.

Bake, cover with foil, 50 min. Remove foil, bake another 10 min.
