24 wings….. Rinse w/water and blot dry/stand for 30 minutes to prevent spatter from hot oil.

Blue Cheese Dressing
1 cup mayonnaise
2 tablespoons finely chopped onion
1 tablespoon finely chopped garlic
1/3 cup chopped fresh parsley
1/2 cup sour cream
1 tablespoon fresh lemon juice
1 tablespoon white wine vinegar
1/4 cup blue cheese, crumbled
Salt & pepper, to taste

Tzatziki Dip
125 ml sour cream
125 ml Greek yogurt
1/2 English cucumber (de-seeded & grated)
3-4 cloves grated garlic
1-2 tablespoons lemon juice
1-2 tsp chopped fresh dill
Salt and Pepper
(Blend & Place in covered bowl and chill)

Rinse w/water and blot dry/stand for 30 minutes to prevent spatter from hot oil.
Pour oil into a large heavy pot to a depth of 2” and fit with a deep-fry thermometer. Heat over medium-high heat until thermometer registers 375°.

Meanwhile, place cornstarch in a large bowl. Working in 3 batches, dredge wings in cornstarch, shaking off excess, then carefully lower wings into oil. Fry, turning occasionally, until chicken is cooked through and crust is golden brown and very crisp, 10–12 minutes. Transfer to a wire rack. Season wings with salt and pepper.

Cool, bag and freeze. Use as needed. Double or triple batch it !!!

To Bake:
Preheat oven to 425 degrees
Place frozen chicken on baking sheet w/parchment paper
Bake for ½ to 45 minutes
Can preseason with salt and pepper to taste.
