1 Onion, chopped
1/2 C Butter
1 C Celery
1/2 tsp Salt
1/4 tsp Pepper
4 lg. Baking potatoes, peeled and chopped
2 C Evaporated milk
1 T Butter

Directions:
Directions:
Cook onions and celery in the butter, in a large pot. When translucent, add the potatoes, salt and pepper, in enough water to cover completely. Cook until potatoes are fork tender. Add 2 C of evaporated milk and butter, and remove from heat. If you want a thicker broth you can mash some of the potatoes or add some potato flakes.

When reheating: cook on medium low heat in a pan, stirring often, or reheat in the microwave.
