6 Lg. onions, sliced or chopped
3-4 T Butter
2 T Sugar
1/2 tsp Salt
1 lb. Leftover roast, or any kind of beef
4-5 C Broth, including any broth from the cooked meat
2 T Better than boullion
1 C Quinoa or rice
Croutons or slice of French bread
1 C Provolone cheese, or grated Parmegiano

Directions:
Directions:
In a large cooking pot over medium heat cook butter and onions, with sugar, and salt until caramelized. Add broth, meat drippings, boullion, and meat. If you are adding uncooked rice or quinoa add now and simmer for 30 minutes. If adding cooked quinoa or rice add after 20 minutes of cooking.

Serve in soup bowls over croutons or toasted french bread, pour in soup and then add a slice of provolone cheese, or sprinkle with grated parmegiano.
