⅓ C plain bread crumbs
½ C milk
2 Tbs olive oil
1 red onion, diced
1 lb. each ground beef, ground pork
2 eggs
¼ bunch fresh parsley, chopped
3 cloves garlic, minced/pressed
2 tsp. salt
1 tsp. ground pepper, red or black
½ tsp. red pepper flakes
1 tsp. dried Italian herb seasoning
2 Tbs. grated Parmesan cheese

Cover baking sheet with foil and spray lightly with cooking spray. Soak bread crumbs in milk in a small bowl for 20 mins. Heat olive oil in a skillet over medium heat. Cook and stir ontions in hot oil until translucent, about 20 mins.

Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture. Cover and refrigerate for about one hour.

Preheat oven to 425ºF. Using wet hands, form meat mixture into balls about 1½ inches in diameter. Arrange onto prepared baking sheet. Bake in the preheated oven until browned and cooked through, 15-20 mins.

Tip: For easier cleanup/removal from the pan, use parchment paper. Once cooked, you can add meatballs to your favourite prepared tomato sauce and simmer 1-2 hrs.
