black eyed peas--soak overnight
ham bone or ham steak
celery
onion
boxed cornbread mix

Directions:
Directions:
Saute chopped onion and celery in large stockpot with oil. Add drained peas, chopped ham, and or ham bone to pot and add enough water to fill.
Bring to a boil and let simmer for at least 2 hours. Add more water if needed.
Serve over buttered, sliced, warm cornbread.
Top with your favorites such as chopped onion, tobasco, jalepenos,

Black eyed peas are a southern staple served on New Years Day. Eating black eyed peas on New Years Day is believed to bring good luck in the coming year. Not a year has gone by that this dish has not been eaten by an Engler, a Greer, a Giardina or a Miscioscia.
This custom is obviously true as the Engler family continues to be blessed with good fortune.
