2 3/4 C GF Flour mix
1 1/4 tsp Baking soda
1/2 tsp Salt
4 tsp Ground ginger
2 tsp Ground cinnamon
1 tsp Ground nutmeg
1/2 tsp Ground cloves
1/2 C Butter, softened
1 1/4 C Cane sugar
3/4 C Date sugar, or brown sugar
1 lg Egg
1/3 C Unsulfured molasses
1/3 C Fresh grated ginger
1/3 C Ginger crystals
Raw sugar for dusting

**To make this recipe with regular flour use same amounts except add 1/2 C of butter.

Preheat oven to 350º

Combine flour and next 6 ingredients in a medium bowl. In a large bowl beat butter and sugars at medium speed with a mixer until fluffy. Add egg and molasses, beating until blended. Gradually add flour mixture, beating at low speed until blended. Add the fresh ginger and ginger crystals, mix well.

Shape into 1" balls and roll in raw sugar. Place 2" apart on a parchment-lined cookie sheet. Bake for 10-12 minutes until browned. Cool on cookie sheets 2 minutes. Cool completely.
