Left over pork from roast
Corn Tortillas
Cilantro
Salsa
Limes
Sour Cream

If the leftover pork is not cooked tender enough to shred, place it in a baking dish with chicken broth and cumin. Bake at least an hour at 325 or until pork shreds easily shred.

Fry the corn tortillas. Place shredded pork and fresh cilantro on the shell. Garnish with a lot of sour cream, salsa, and lime.

This is an easy and delicious way to use leftover pork. You can add to the spices if you are baking the pork to shredding consistency. Chile powder and onion powder go well with the cumin. Salt to taste.
