2 c Brown Rice
¼ c Spanish Onion, Small Dice
½ c Dried Cranberries
4 c Low Sodium Chicken Broth
TT Fresh Herbs
TT Salt and Pepper

Directions:
Directions:
Heat a medium saucepan over medium-high heat. Add 1 Tbsp of extra virgin olive oil and sweat the onion until edges are translucent.
Add the cranberries and broth. Bring to a boil and reduce to a simmer.
Simmer, uncovered, until broth is absorbed and rice is tender.
Fold in fresh herbs and season to taste with salt and pepper
