2 # Potatoes, sliced
12 oz Mascarpone Cheese
1 cup Parmesan Cheese
2 Tbl Brown Sugar
2 tsp Salt
TT Fresh Herbs, chopped
3 cups AP Flour

Directions:
Directions:
Boil the potatoes until tender and process through a food mill.
Add the cheeses, sugar, salt and mix to combine.
Gently fold in the fresh herbs.
Add the flour and mix only enough to combine.
Chill for at least 3 hours before rolling, cutting and forming.
