2 lbs boneless chicken, cut in small pieces
1 lb. smoked sausage, sliced in 1/4 in. pieces
1 c oil
1 c all purpose flour
1 c chopped onion
1/2 chopped celery
6 cups chicken broth

Directions:
Directions:
Make a roux by heating oil on low to medium heat and adding flour. Stir to blend and continue stirring until dark brown. This could take several minutes*.
Add chicken to roux and allow to brown. Stir in vegetables. Begin to slowly add chicken broth until mixture is blended. Add salt and pepper and allow to simmer for 1-2 hours, stirring occasionally, on low heat.
Place sausage slice in skillet and allow to brown until done. Add to gumbo 10-15 mins before ready to serve.

*A roux requires patience, but is essential to the taste of gumbo -- can't be rushed. If you see evidence of burned flour (black specs), start over.
