Nanny's Cinnamon Rolls; Plain, Sticky, Pineapple & Icing Recipe

The Rolls


Ingredients:

2C Warm water
2 Pkg yeast
½C Sugar
1t Salt
3C Flour
1 Stick (½C) margarine (melted)
1 Egg (beaten)
Another 3-4C Flour

Directions:
Directions:
Dissolve yeast, sugar & salt in warm water
Add beaten egg, melted margarine (let it cool or it will cook your egg) & 3C of flour
Mix well (on low with your dough hook has always worked well for me)
Slowly add the rest of your flour, stopping when the dough becomes moderately stiff. Again, on low with your dough hook, I consider it the correct consistency when it self cleans the sides of the mixing bowl.
Continue to knead with your dough hook on medium for several minutes but stop if/when it starts to "unclean" the sides of the bowl.
Dump it out on to a floured surface, knead by hand a dozen turns or so, form into a ball
Put the dough in a large greased bowl, cover with a damp dish towel & put in a warm moist place to rise.
Let rise till double
Punch down
Let rest 10 minutes
Shape into rolls: Divide in half, roll out to about ½ inch thick rectangle, spread with softened butter, sprinkle with sugar & cinnamon, roll it up. Cut into rolls.& place them in a greased cake pan with the sides just touching. Cover & let rise again till double again.
Bake at 350º for approximately 20 minutes. Until they are light golden color on top & bottom
 

For Pineapple Rolls

9 oz can Dole crushed pineapple
1T Cornstarch

Mix pineapple & cornstarch in sauce pan & heat over low heat until mixture thickens
Once the dough is rolled out, cut into strips & form into an oblong circle with the insides touching so it forms a bowl. Fill the bowl with the pineapple mixture & bake.
 

Icing

Powdered Sugar
Soft Butter
1t Vanilla
Milk

Directions:
Directions:
Put all ingredients in a bowl & stir. Adding milk slowly until it is the consistency of icing. Then frost your rolls!
 

Brown Sugar Sticky Topping

1C Brown Sugar
2T Butter
1T Clear Corn Syrup

Directions:
Directions:
Combine all ingredients in sauce pan over low heat until butter & sugar melt & become the consistency of syrup. Pour into greased cake pan & place the cut cinnamon rolls on top. When done, turn the pan upside down on a piece of was paper & leave. The rolls should drop to the paper & the topping run out of the pan & settle on the rolls. At least that is the way it worked in Nanny's kitchen.
