Eat your veggies and enjoy them too

For the Oven Fries:
- 4 large red russet potatoes, cut julienne or steak cuts
- 3 tablespoons of extra virgin olive oil
- salt and pepper to taste

The Veggies

- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of unsalted butter
- 1 sweet onion, minced
- 1 leek stalk, minced
- 2 cups of white button mushrooms, sliced and diced
- 3 garlic cloves, minced
- 1/2 cup frozen sweet peas
- 1 carrot, diced
- 1 cup zucchini, diced
- 1/4 cup sliced black olives(optional)
- 1/4 cup fresh italian flat leaf parsley, minced
- salt and pepper to taste

The Gravy

- 1/2 cup white wine (I prefer a fruity wine but choose to your palette’s desire)
- 3 tablespoons of unsalted butter
- 3 tablespoons of white flour
- 1 1/2 cups of vegetable broth (you can use chicken or beef broth as well)

- 3 cups of fresh cheese curds ( you can use shredded cheddar or mozzarella as well)

º preheat oven to 400

- in large bowl, toss the potatoes with the oil, salt and pepper.

- line a baking sheet with parchment paper and distribute the potato slices evenly, for quick baking.

- bake 30-40 minutes and set aside.

Cooking the veggies

- in small pan, heat oil and butter.

- add garlic, onions and leek, cook until soft, 5-10 minutes.

- add carrots, peas and mushrooms and sautee for 10 minutes.

- season with salt and pepper to taste.

- add white wine and simmer for about 5 minutes or until liquid is absorbed.

- put in bowl and set aside

Making the gravy

- using a medium saucepan, melt the butter until gently bubbling.

- add the flour and quickly whisk until smooth. No lumps allowed.

- gently pour in the broth and simmer to thicken the sauce. Keep stirring to avoid lumps.

- add the veggies and stir, cooking on low heat for 3 minutes. Just enough time for all the flavors to come together.

The Assembly

- place the baked fries in a 9x13 pan, lined with parchment paper.

- pour the veggie gravy over top and spread evenly.

- sprinkle ALL the cheese over the fries and broil 10 minutes.

- serve with a good movie and a cozy robe.
