12 medium potatoes, peeled and cubed
12 stalks celery, diced
4 carrots, diced
2 medium onions, chopped very fine

Add:
4 quarts water
Optional: For added flavor, add some chicken bouillon

Boil until tender (20 minutes) drain and reserve liquid for use later.

3/4 cup butter (1 1/2 sticks)
3/4 cup flour
1 1/2 tsp. salt
1 1/2 tsp pepper
3 cups milk

Melt butter, stir in flour, salt, pepper and gradually add milk; Stir until right consistency and thick. Add cooked vegetables and 2 cups of reserved liquid, gradually. Keep adding more vegetable liquid until soup is right consistency.

Makes 5 quarts
