16 Egg Yolks (Don't worry if some egg white makes it in to the dish)
1⅓ C. (325 ml) Icing Sugar
3¾ C. (925 ml) Milk
3 C. (750 ml) Whipping Cream, divided
½ tsp. (2 ml) Vanilla
1½ C. Bourbon or Rum (What?! Really? That's a lot!)
¼ tsp. (1 ml) Nutmeg

In a saucepan whisk egg yolks with sugar until smooth. Whisk in milk and ½ C of the cream. Cook over medium-low heat, stirring and without boiling 8-10 mins., or until thick enough to lightly coat the back of a spoon. Remove from heat.

Stir in ¾C of remaining cream, and vanilla; strain into bowl. Cover and refrigerate until chilled, about 30 mins. Whisk in liquor; cover and chill another 2 hrs.

Transfer to a punch bowl. In a med bowl, lightly whip remaining cream and fold into eggnog. Sprinkle with nutmeg.

Personally I think that's a lot of liquor for one batch of eggnog; I only add 1 C. I have friends that actually bump it up to 2 C. I recommend starting with 1 C and add more if you find it too mild.
