1 1/4 cups currants
2 cups flour, sifted
2 tsp. baking powder
1tsp. salt
1 T sugar
1/2 cup shortening
2 eggs
1/2 cup milk
3/4 cup strawberry jam

Directions:
Directions:
Rinse and drain currants
Sift together flour, baking powder, salt and sugar
cut in shortening
Add beaten eggs, milk and currants
Mix to a moderately soft dough
Turn out on floured surface and divide in half
Roll or pat each piece into a circle about 3/8 inch thick.
Carefully fit one piece in a buttered 8 inch round cake pan, pressing dough about 1/4 inch up sides of pan.
Spread with jam.
Cover with remaining half of dough
Cut through dough with sharp knife dividing it into 6 wedges.
Bake in hot oven, 425º for 20 to 25 min. Serve hot.
