1 lb. boneless chicken (cubed)
3 eggs beaten
1/2 C and 2 tsp. cornstarch
1 1/2 Tbsp. rice vinegar
2 Tbsp. rice wine
3 Tbsp. sugar
3 Tbsp. soy sauce

Directions:
Directions:
In large bowl, thoroughly blend 1/2 C cornstarch and the eggs. Add the chicken and toss to coat. In a small bowl make the sauce by combining 2 tsp. cornstarch with the wine, vinegar, sugar and soy sauce.

First Stage- Heat 1 to 2 inches of peanut oil in wok or very large skillet to medium high heat. Fry the chicken in small batches, just long enough to cook through; remove.

Second Stage- Leave 1 to 2 Tbsp. of oil in wok or skillet
