3 TBSP local honey
3 TBSP soy sauce
3 TBSP balsamic vinegar
1 tsp. grated fresh ginger root
1 clove garlic, minced
2 tsp. olive oil
salt and pepper to taste
4 (6oz.) white fish fillets
½ TBSP vegetable oil

Directions:
1—In a shallow glass dish, whisk together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season the fish fillets with salt and pepper, and place them into the dish. If the fish fillets have skin on them, put them skin side down. Cover and refrigerate for 20 -30 minutes to marinate.

2—Heat the grill to medium-high heat. Lightly brush grill rack with oil. Remove the fish fillets from the marinade and place on the grill. Reserve the marinade. Grill the fish 4-6 minutes on each side, turning only once. It’s important not to turn the fillets over too much. Cook until the fish flakes easily with a fork. Remove the fish to a serving platter and cover to keep warm.

3—Pour the reserved marinade into a skillet and heat over medium-high heat stirring often until the mixture reduces to a glaze consistency. Spoon over the fish and serve immediately.
